Crystallised sugar in my chutney
« on: October 07, 2012, 11:46 »
Is there any way back for my chutney?  I have just tried it after leaving it for ages in the back of the pantry and am horrified to find that the sugar has crystallised and I detected several tiny nuggets of grit like sugar in there.  I'm gutted as I had made a lot of jars to give away to folks

Is there any way of saving the situation?

I would carefully re-boil and possibly add a little water.  Could you have put in too much sugar when you initially made your chutney? :(

Cheers,   Tony.
I may be growing OLD, but I refuse to grow UP !

Possibly you raised the temp to quickly, before the sugar had dissolved :(

Pass it all through a mouli - while cooking another small batch of lumpy chutney (lots of sultanas maybe )  mix them both together and bottle. Well, that's what I'd do  :D

I agree with Mum.
Sieve it then make a small batch of chutney with chunky chopped onions and eating apples 'cos they don't go to moosh like the Bramleys. Add something else with texture such as raisins then mix the 2 and bring to a boil.

You could sling a handful of toasted nuts in too and attach a label suggesting that it would be really good with cheese but especially good with blue cheese for the winter festival.

I think it must have been raising the temperature too quick

I like the sound of making it into another chutney, and I'd not thought of that.

Thanks for the suggestions and I'll get mouli-ing  :D
