Ripening sweetcorn?

Ripening sweetcorn?

Is there anyway to ripen sweetcorn of the plant.  Despite the tropical sunshine of the last week my sweetcorn cobs are still all white.  I hope we are frost free for the rest of this week but when do I just have to pick anyway?  If I do pick any ideas on how to use if I cannot ripen?
Time waits for no man and I can't wait for growth.

Two things to look out for; have the cobs swollen to a good size, and are the "silks" changing colour at all? (they start pale yellow and finish up quite dark brown and shrivelled when the cob is ripe.)

If both of those things are well under way there's still a chance you will get ripe cobs (if not something has probably gone wrong.)  :(
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!

Is there anyway to ripen sweetcorn off the plant. 

Bottom line is, after taking all the above into consideration, sweetcorn will not ripen off the plant. Immature kernels will just dry out.
Did it really tell you to do THAT on the packet?
