Red Velvet and Chocolate Heartache - cookbook

hello all - I have got a new cookbook after much debate on another forum I visit -  the main thing about it is that it is for cakes but generally with no butter etc but using up all sorts of vegetables. So far I have done a coffee and walnut cake featuring carots, a lemon cake with swede and a banana loaf with courgette.  Just mentioning it in case any of you like cake and have lots of spare veg. Bit better for the health than the usual cakes too.

They sound weird but I get desparate for homemade sweet things, shop bought are way too expensive to do often and I've always liked baking. Trouble is ordering over a bank holiday weekend was stupid, it will take ages to come and I've got an attack of the munchies now!

I bought one as well so i can make them for my husband and youngest son who cant eat wheat and me as well

I had a go at the Strawberries and cream cupcakes, page 5 cos I had the right tins for that. They were really good but as I didn't want them too sweet I didn't bother to ice them and they still went down a treat. In some of them I replaced the jam with blue berries.

I will have to buy several new tins if Harry is to be believed that you MUST use right size tins. I'm sure she went through my cupboards and picked all the sizes I haven't got ::)

Ok I've now made little cakes with courgette in and 2 large cakes with butternut squash in and they are really good. Tonights cake is a ginger cake and it contains no wheat so fantastic for me but hubby really likes it too, it isn't artifical like bought Gluten free cakes.
