Gone-to-seed leeks still edible

For reasons I won't bore you with, my entire crop of leeks (planted June last year) have gone to seed. The stems still seem solid enough so are they likely to cook and taste the same?

I have pulled all mine up now and cut and freezed them. I just poke the middle bit out unless making soup and it just gets blended.

Thanks. I have pulled up a dozen or so. Most are whoppers, about 3" diameter so I'll follow your routine with them

I fry the stem the bit flower head on.
Very nice.
You can use the flower stem in a salad.
