According to Google:

Amaranth is an ancient grain that is similar to quinoa. The small, light tan colored seed is cooked similarly to rice and oats and eaten as a pilaf or porridge. Amaranth is also ground into a flour and used in baking, particularly in recipes that are gluten-free

Yep I grew some for salad leaves this year, but I think they got a bit big before I tried them & they were bitter, I left them to grow & in the poly tunnel,boy did they grow. Must have been 7ft tall easily, beautiful dark red flowers that won me 2 prizes in 2 local shows, a first & a second I think. They were much admired, as flowers they’re known as Love Lies Bleeding.
 I’ve saved some seeds but I’ve not cooked with them. Interestingly,the ones I planted outside were a lot,lot smaller.
