Generally, you just bury them enough so that the white bulb part is below the surface. As it grows, it will push itself up and out, the way it prefers to grow.

I'm not a fan of peat pots because in my sandy soil particularly it's very difficult to keep them wet enough to stop them presenting an obstacle to the young roots (when I used to use them I had to partially break them apart before planting which somewhat defeats the object of the exercise!)

I think that could be a even more of a problem with onions as you probably won't be burying the whole pot beneath the soil to get the right planting depth, and then you've got an even biggerr drying out problem as the exposed tops of the pots "wick" water away from the rest of the pot.

Like leeks, onions don't seem to mind a bit of root disturbance whilst young - I'd go for ordinary plastic pots myself if potting on.
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!

Hi M1... are you planning to plant into pots then into the soil in Spring? or are they staying in pots?   I always used to let them grow to 3-5 mm thick then plant straight out.

Why are you going into pot first and not planting straight into the ground?
