Damson Gin leftover cake

I have just decanted some Damson gin that I put to brew in August. Very nice batch, lovely and clear. However that left me with the dilema of what to do with the damsons as they were way to good to throw.

I put them in a dish(I used my lasagne dish) and made the following batter.
3 eggs
125g flour
50g sugar
284ml of buttermilk - or you could use milk I guess - I just happened to have the buttermilk.

Just pour over the damsons and bake. I gave it 40 mins at about 160.

Dredged with icing sugar it is lovely.

The reward of a thing well done is to have done it....

OOoh yes that would be absolutely delishusss MMMMMM  :happy: :happy:

I've got some blackberries left from the brany, in a jar in the fridge --- could do a similar version with them for dinner on Sunday maybe  ;)
