Storing eggs

I am aware that my girls may not lay eggs every day this winter as they are over a year old.  Someone mentioned freezing eggs but I can't find that anywhere.  Can you tell me how best to store them as I will not buy any when I am so used to my own really fresh ones.

Not done this myself but I think people usually beat them then freeze them. Can be done in ice cube trays so they are in easy to use portions.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

I beat mine up together in 3's (ideal for cakes, omlettes, scrambled and carbanara in those quantities). I think if you want to seperate them then the white needs to be lightly beaten and the yolks need sprinkling with either salt or sugar (make sure you mark the containers as to whether sweet or savoury though  :ohmy:)

You could also try buttering them.

I think that the idea is to rub butter into the shells, so blocking up all of the pores. I think that long term it does alter the flavour of the eggs, and I'm unsure as to how long a buttered egg will last.

Eggs can be frozen, but you'll need to crack them first. To freeze whole eggs, break them into a bowl and beat a little to blend. Tip into a freezer bag or airtight plastic container, label the container and use within three months.

It's nice to hear the views of a new member, so welcome aboard, but I think that you'll find that many, many people on this site have frozen eggs with no ill effects, and consequently your post does come across as a little too proscriptive.
