Ours stay in the fridge, and we try to make sure none are more than a few days old.  If we have a glut, we make pasta and dry it, and it can be stored for weeks (if not longer) that way.

I store all my eggs in fridge & try to use them within 2 weeks. If in doubt re freshness put into deep bowl of cold water: if they float - they are off; if they half float they are probably ok for cooking in cakes or quiches, check smell when cracking them to use.  You can pickle them if you have too many - lots of recipes on the net or just make sure you use them - or give them away or barter them if possible.

I know its not a usual thing, but in the days when I did have a  glut of eggs, I did try freezing them! whisk them a bit as if making scrambled eggs, in 4's or 6's put in suitable container.  When defrosted, they look a bit jelly like, but I've used them for scrambled, omelettes, cakes and they taste fine!

At the moment, I'm really short as the 12 new girls haven't started to lay yet.
