Something is eating mine faster than it can produce stems - isn't it poisonous?

Yes thats a flower head. Get it ripped off or the crop will be reduced..

Cant help with the eating issue. never had anything eat mine?

Looks like you've got snails chomping on the leaves

deffinately snails , and you should pull out the flowering head
