Stopping seeds bolting?

Hello all, sorry if this has been covered elsewhere, we have tried to grow plants from seed  starting in seed trays under glass but they invariabley go leggy and bolt, what are we doing wrong?

erm.....too warm? do you take off glass as soon as germinated to let enough light in?
Do you prickout soon enough...... I find it easier to space seeds further apart or even just sow a couple to each small pot in a tray insert and pinch weakest one out.
What have you been growing that's gone wrong?

Bolting means flowering and going to seed, I'm not sure you really mean they are flowering, but if you do, they have definitely been in there too long! 
Seriously though, too warm and not enough light both make seedlings leggy. Also, too many seedlings too close together will shade each other and use up the nutrients too fast.
I demand the right to buy seed of varieties that are not "distinct, uniform and stable".

Thanks for the replies, woody your right I thought bolting was growing too fast :wacko: Looks like we're leaving them covered too long. MOS we have tried all sorts, tomatoes, peppers cucumbers loads of herbs all with the same results!!!!!!!!!!
