I have some bindweed growing in the wide grass paths around my plot that are regularly mowed [thin strips of lawn basically].

Dont wish to deal with it by digging out so using roundup. My question is - how long do I need to wait after treating the bindweed leaves do I need to wait before I can mow? I.e how long does it take for the weedkiller to be properly taken up in the root system so that removal of the above ground parts of the plants will not stop the plant dying?

normally 10 days  BUT  bindweed  roots go a low way  but you wont be mowing the roots  so 10 days to 2 weeks

Roundup kills grass?

Are you treating the bindweed leaves without applying Roundup to the grass e.g. carefully painting bindweed leaves,  training the bindweed up canes and treating the bindweed, allowing the bindweed to grow across bare ground and treating it there.
