I don't have a great deal of room for chitting my Spuds, so some are in small trays and are touching each other. Is this a problem and should there be space between each potato? I'm thinking it might cause them to rot if they don't have air flow all around them.

No problem at all. They dont rot in their bags at the shop so dont worry about that.

They'll be fine laid up side by side (egg boxes can be ideal, but I just sit most of them side on to each other ).  Check them from time to time.  All will be well
