I think their texture is nicer if eaten small, 3-4 inches or so. Also an ideal size to stuff.
 Larger and they can be chopped up, smaller than that and they can be halved to keep their lovely scalloped shape, and placed on a lightly oiled griddle and fried. Fantastic when done straight from the allotment!

I love butternut squash, are these similar in flavour as I've never tasted them?

You can pretty much use them as you would courgettes. Flavour is similar too - quite subtle. Good (and pretty) on kebabs. We had them (Sunburst) roasted along with peppers, onions, etc. yesterday with salmon and cous cous. I have also pickled some (recipe: http://www.myrecipes.com/recipe/pickled-baby-pattypan-squash-50400000128162/print/) but have yet to try eating any of these. Will be picking a load more before my holiday and may have to freeze to use in soups, etc.
