Harvesting comfrey

As we are preparing the runner bean bed, we like to put a layer of comfrey leaves in the trench. What is the best way to harvest the comfrey plant without devastating it, as there are plenty of leaves for more than the bean bed?      Do I clip them from the top, the sides, the bottom?     
I'm queen of my own compost heap and I'm getting used to the smell.

I tend to take the oldest ones at the bottom Lotts.

It seems logical to make sure that the plant has enough to continue to thrive through the year, and I think three pluckings is about right per year - may be wrong there, but it is so vigorous, it doesn't need too much pampering...

I'm soaking them in several four pint milk bottles - phew...;0)

Thanks Growster.    I will be making some for a brew too in large milk bottles (shut the lid for a bit and let them stew).
