Dad just brought the last of his sprouts home from the lottie and Mum has used some and frozen others.

Some she blanched and some were just frozen. She says that neither tasted as good as fresh when they came out of the freezer.  :(

Is this the norm with sprouts or is there a knack to preserving them?

I'm hoping to grow my own this year but I don't want to be eating them all in one go!!  :shock:

Sprouts are better fresh but what I do is blanch for just 2 minutes now. Then into cold water, followed by iced water. Dry off and freeze asap.

To use, allow to de-frost to room temp then saute in a lidded pan with butter and seasoning. Could use olive oil if vegan or suchlike.

Still not quite as good as fresh but very acceptable. I hated sprouts until we had home grown and learned to cook lightly rather than boil until mushed!

Do you remember the old days when mums boiled everything until it was mush before the 'al dente' stage got here.  I'm sure there was a competition between mums along the lines of 'my daughter squeezed half apint out of her sprouts last night.  (or was this just my mum). :?

No it's not just your Mum....

When my MIL was alive she would do us a delicious sunday roast but as soon as you touched the brocolli it would collapse in a mushy heap!!!  :D

sprout puree!

have you tried sprout puree, just cook a load as normal then blitz in the food processor with butter, black pepper and a dash of double cream!

You can also blitz and freeze before adding anything, just reheat and add the stuff when you use it  :D
