Ok folks I had a go at the cookies and they are yummy, I adapted an ordinary recipe. I don't know how well they keep and I'm unlikely to find out in this house :lol:  :lol:

4oz butter
4oz caster sugar
1 level tsp ground ginger
1 medium egg yolk
6oz rice flour
1 tsp baking powder
1 tsp water
1.75 oz cornflakes (lightly crushed)

Oven 170 C

Cream butter, sugar and ginger, add egg yolk and beat, add water and beat. Add rest of ingredientsand fold together. Make 16 balls and squish a bit. Place 8 at a time on a baking sheet lined with non stick liner. Bake for 12 -15 mins til golden. Cool on tray for a few mins then tranfer to cooling rack.
THEN TRY TO WAIT TIL THEY ARE COOL BEFORE EATING!

They sound yummy! I can only use the Doves GF Cornflakes though which are a bit tougher than usual. Do you think these would work as well?

OOhh, going to write this down and try it, i miss ginger biscuits so much. Ditto to the doves farm cornflakes. Oh how i miss kelloges cornflakes with ice cold milk. Got a gorgeous gluten free chocolate brownie recipe if any one wants it? Its from Healthy Gluten-Free Eating by Darina Allen and Rosemary Kearney. I highly reccomend the book if you are a coeliac, got some gorgeous recipes in it.

Any cornflakes will work in recipe, it just alters the texture.
