He's called Augustus,  lives in the fridge and gets fed every week.

I read that spelt wheat was introduced to the UK by the romans so it seemed a fitting name  :D

Also Augustus Gloop from Charlie & the Chocolate Factory was in my mind as even his best friends would say my Augustus is a gloop

we love the Munchy Seeds range.
Have you ever used the chilli seeds they do in your bread? I have some here and have been wondering if i should chuck some in the next loaf.

The River Cottage Bread book suggests an extra 5 minutes kneading for spelt flour and proving baskets to hold the bread up.

Dont think they do spelt flour over here, havent found it yet anyway.

Can't see why not - should make a great bread to have with soup or for cheese (or beans) on toast.  Just don't think it would go too well with jam, though!

Well, today's spelt loaf turned out beautifully so I'll blame yesterday's disaster on the recipe  :)  Yesterday's one is now in the freezer having been whizzed up into breadcrumbs

Ta for the suggestion about the proving basket!  I think I'll treat myself to one as I know I'll be making more loaves  :)

Here's another bit on working with spelt. Sounds like it's not the flour for bread machines, but rather hand kneading which I personally don't mind.

Ah, thanks for that. That's quite enlightening.  I am currently having more problems with today's spelt loaf.  I've got some wholemeal spelt and am trying to make an olive loaf but it doesn't seem to want to rise.   It does say on that web site that it's underinflated. The one I made yesterday was lovely, but the first one was a disaster  :D

Someone suggested a proving basket and I shall treat myself to one

Yesterday's loaf was delicious and was demolished in minutes  :tongue2:  Not all by me I hasten to add  :)

Wow! Thanks  I shall certainly go and check that out

I just tried the first slice of the wholemeal spelt olive loaf..  It hasn't risen very much but it's lovely and soft and very, very delicious.  Lovely texture too. It's quite dark

I'm really chuffed as I thought it was another one for the bin.  My husband is going to love this with his casserole when he gets in from the match, which we've won 4 - 0  :D
