I quite like caraway seeds in bread, getting back to the topic...
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

Spelt flour makes really good soda bread and it's quick too. If you want to make really quick bread you can make "Bakestone Bread" (I use a fryung pan cos I don't have a bakestone)

300g Spelt
1 rounded tsp bicarbonate of soda
1/4 tsp salt
225 ml plain yoghurt

MIx all ingredients. Roll out on floured surface, cut with round biscuit/scone cutter and bake on a medium heat frying pan for 5 mins each side til risen and brown.  Cool on a rack then slice through middle and butter.

As rain stopped play on the allotment yesterday afternoon  :tongue2: I stomped off home and made the cookies and the bread.

Cookies are pretty good - crunchy on the outside and crumbly inside, plus a doddle to make. Wholemeal as well - must be health food right  ;)  Better had be cos I've scoffed loads  :blush:

Bread is luuuurrrvvvvyy.  Baked it on a baking sheet rather than in a tin. Doesn't rise as much as normal wholemeal flour, but lovely crusty loaf.  I don't usually like wholemeal bread that much, but this spelt stuff makes a much nicer tasting and better textured loaf  8)

Not a l*****d in sight on either  :lol:

Thanks for the soda bread idea Poolfield2 - will try that next.

I made the 3 minute spelt seeded loaf today but I must say it's as hard as rock on top but doughy in the middle

It tastes fab though  :D

My sour dough starter is a spelt one.  He's called Augustus,  lives in the fridge and gets fed every week.  Then I make sour dough loaves on my weekend off with rye and white bread flour.

I love the flavour of the loaves and they make the best toast ever  8)

I use spelt flour as part of the total amount of flour in the breadmaker - probably not more than a third - to give a slight difference in texture.  Comes out fine.

And I throw seeds into any mix for bread when I have some - we love the Munchy Seeds range.

Well, it was a disaster.  I did toast some and have jam on it and it was lovely but it was largely inedible as the top was so hard yet the middle was still like the raw mixture that went in the oven  >:(

So, it got put back in a hot oven and I'm going to turn it into breadcrumbs  :)

I shall have another go but use a different recipe this time
