Lots of green tomatoes? make mincemeat!

Green Tomato Mincemeat (for you know when!)

2.5 kg green tomatoes, minced 
2 kg minced, cored apples
115 g beef suet (or use vegetable)
1.4 kg brown sugar
120 ml cider vinegar
20 g salt
7 g ground cinnamon
7 g ground cloves (or mixed spice)
6 g ground allspice
455 g raisins
450 g candied mixed peel
3  large oranges, peeled and cut into bite-size pieces
1 lemon, finely chopped
Tablespoon (or 2 ;) ) of brandy


Put green tomatoes, apples, suet, brown sugar, chopped oranges, chopped lemons, raisins, and candied peel. Season with salt, cinnamon, cloves and allspice. Cover, and cook over low heat for 3 hours.
Heat jars in the oven andsterilize lids in boiling water.
Ladle mincemeat into jars and screw lids on.
Carefully put jars into a deep saucepan and add hot (not boiling) water, up to the shoulders of the jar and bring up to boil.
Reduce the heat until the water is gently boiling for 15mins.


The hot water treatment is for longer storage; if you are going to use this within a week or so there is no need to do it.

If anyone does try this, please let us know. I am intrigued but not brave enough - oh and the fact I am lacking toms.

I dont think it would be too different as it seems tk have sweetness .
