Where possible I intend to try and save seed for next year.
Am I correct that providing the Cultivar isn't an F1 then any seed can be saved.

For example I have bought these Sunflowers, can I save the seed for next year?

You are right about saving seeds from non-f1, but according to moles seeds your sunflower is
 an f1 variety

When saving seeds the main thing is to dry them throughly if they are at all damp they will rot.  I save runner and dwarf bean seeds by leaving on a few of the best runners and then cutting off the plants when they are finished and leaving them hanging in the shed to dry for a couple of months then storing in a tin with some rice to keep the damp out.

Other seeds can be saved but try to gather them on a warm dry day and keep them in a cool dry place, the back of the fridge is good, if you are allowed.

You need to be careful with some veg that will cross pollinate e.g. squashes. They need a bit of extra help to keep the variety true.
