Mulberries - any ideas?

I'd just returned from holiday when my neighbour arrived at my door bearing gifts ... a washing-up bowl full to the brim with mulberries from his garden!  I'm assuming you treat them like raspberries, although they're bigger and a bit firmer.  Also, he's given me a mixture of red and purple, so I presume some are less ripe than others?  Any hints/tips/recipes for mulberry jam??

Hi CHeshire. DId you have a good holiday on your boat?

Someone has given you mulberries, you lucky, lucky lady.

Yes the red ones are under ripe the black are ripe. You can use them as raspberries but I think they are slightly lower in pectin. Just grate a cooking apple to help it set. 8oz to 2 lb mulberries.

Personally I would open freeze them and use them for trifle at Christmas or make into icecream.
I made some gorgeous mulberry gin one year.

Well actually I would just eat them with whipped cream and visit Nirvana for a while. A ripe mulberry is the closed thing to heaven on earth. :)

We used to have access to a mulberry tree in a public place but others living nearer have found it now so the tree was bare. :( :( :(

Actually thinking about it I remember when I did make some into jam that the set was a little runny so you would need some additional help with pectin content.

Many thanks, Mrs B!  I did open freeze them as soon as I got them, because I know I won't be able to deal with that quantity before the weekend.  I'll perhaps use jam sugar with the pectin already added with half of them and see how we go. 

Oh, and yes, thanks for asking, we had a lovely time on the boat - a drop of sunshine makes all the difference!! :D

Not sure how old this one is, but it's certainly prolific ... you can look forward to bountiful harvests in years to come!  :D

I will be planting a mulberry in the garden very soon. We have finally finished the bungitlow and can concentrate on the garden. Builder coming Monday to do the remaining hard landscaping and then it is all systems go.

I made another batch of your chilli jam recipe last week and added 4 teaspoons of smoked paprika. 3 just wasn't enough but four gave pleasant smoky undertones. You might want to try it. ;)
