Fry the onions with some cumin, coriander, chilli and seasoning and the spinach and use to fill filo pastry to make samosas. Could add some veggie cheese,

Do the same but change the seasoning to nutmeg and cinnamon and add some veggie cream or soft cheese.

Make falafel and serve in pitta with salad.

Make a chick pea salad with onion , seasoning and oil and vinegar with a good squeeze of garlic. Make the spinach into a salad.

Make a chick pea curry with onion, garlic, potato and peas, using a ready made curry paste. Serve the curry with rice and spinach salad.

Roughly chop the chickpeas, and the spinach add some flour and egg chopped mint or parsley and make fritters. Could add some cubed haloumi cheese.

Quite hard to come up with lots of ideas without tomatoes for the sauce.

I love falafel!  Yum  :tongue2:

Chick pea fritters  :tongue2:

I make chick pea curry but make my own paste.  It's a really healthy dish if you pack the spinach, cauli, toms, and a bit of squash in. Way lush  :)

Cook the rice in stock, stir in onions fried until brown, plus the drained chickpeas. Serve with plain yoghout with grated cucumber and mint stirred through it

Do a search for the Chick pea curry on this site, it is really good, although I put a bit more spice in it than what the recipe actually says.

I saw a recipe for chickpea pancakes the other day - using chickpea flour. Are your chickpeas dried? I guess you could blitz them to flour if they are.
145g chickpea flour
2tbsp e.v. olive oil
1/2 tsp sea salt flakes
To make the batter put it all in a bowl with 375ml water and whisk until smooth. cover with cling film and allow to stand at room temp until the flour dissolves. Ready for use.

I like them as is (once cooked of course). A favourite breakfast is a bit of salad stuff and some plain chickpeas mounded on top.
