ahhh glad you like it dave , i havn't tried it with mint yet that will be my next one .
i have a courgette fattening up as we speak
when im with my 9yr old she's the sensible one

Just made some courgette and mint soup after reading this thread earlier.  It is lovely, thank you for the suggestion!  For anyone following weight watchers I also made it for 0 points by using one of the low cal spray oils.

it looks like i may have converted a couple of others too, and the mint sounds like a perfect addition to the courgette

to courgette soup , i chopped  a rather large one up put it in a pan with onion rosemary and chive's and added salt and pepper and it was lovely so i took some to work and the lads loved it , im surprised how nice it is .
i have also been told it goes well with mint so will be trying that one next yum yum :)

When you say Large - do you mean Courgette or LARGE.  I have them all over th place, less plants next year I think :D :D

i let them grow to around 10inches so that one fat courgette will do it , but if you have bigger then just try it out  and i bet you will be suprised

Gorgeous, isn't it?  Did you put a tomato in as well (not sure if you were following a recipe or winging it)?  That seems to add the finishing touch for me.  Got tons in the freezer now!
