If, like me, you've got some that's bolted, can it be left to harvest the seeds instead?

If so, how and when?

Yes.  The flowers are also a tasty addition to salads.  Pick and use the seeds green - I don't think they'd ripen sufficiently in the UK.   You can also use the root in Thai cooking.
