hi    can anyone advise me if these can be frozen.
 we've got far too many for just us two to eat  before they go off.

I'd think they would freeze OK, once cooked, but I've never frozen any.

Nice problem to have ... did you grow them yourself?

Never tried it but I can't see why they wouldn't store well fresh in compost/soil/peat in a cool dark place.

If you do freeze then a cooked puree will almost certainly work okay although that limits what you can use it for once thawed.   Maybe try a few diced and blanched - defrost them a few days later to see how they are.  Only then need you decide what to do with the others.

I used to mash them and then freeze for baby food but the texture is not quite as smooth after it's been defrosted - bit 'grainy'  :(

you've given me lots of ideas on where to look for some information
we didn't grow them but we are seriously considering trying to next year. we had never tried them before and they are great .
