preparing horseradish

has anyone got any suggestions as to how you grate horseradish without feeling as if you are grating your eyeballs as well?  I had to give up on my processing efforts in the end, as my eyes were streaming so much.

Any suggestions would be gratefully (sorry!) received, as I have another four plants-worth of roots left to deal with.

Outside on a windy day!  :wink:

I used a food processor (Magic Bullet) and managed to escape the worst of the fumes.  It is worth it though - lovely stuff.

thank you Gobs - very helpful!  Although if OH asks if there is anything he can do to help in the kitchen, I might just stitch him up with that particular job...

and thank you WG - actually hadn't thought of that!

Another question - if I wanted to store it in a jar, do I just mix it with vinegar, and if so - how much?  And can I then squeeze the vinegar out and mix it with cream or whatever before I use it?  It's currently in a bag in the freezer slowly destroying the shelf it's sitting on....

I added enough vinegar to let the Magic Bullet do its job.  Drained the vinegar off (drain through a seive for use on next batch) and have simply stored the grated stuff (fairly dry, covered) in the fridge for several months now.

Also, try it in mayonnaise instead of cream.  Keeps longer and tastes great.
