I have access to windfalls and have just made half a dozen jars of apple jelly but with a difference.

I divided the jam into 3 and into one put lots of chopped chillies, into the 2nd lots of chopped mint for a mint jelly and  in the 3rd 4 cloves of roasted garlic, pounded up with a few sage leaves.  Delish if I say so myself.

They would be really good for the pectin needed for perhaps elderberry or blackberry jelly (if you have a jelly bag to strain them through).

Also good for mint jelly as previously mentioned.

Or perhaps as the base for mustard relish.

I've got a good Nigella spiced apple chutney recipe if you're interested?  :)

When the kids were small, we got lots of windfalls I picked from my local orchard. Just cut off any bad spots. Unripe ones were left to ripen in our cool garage and then turned into whatever was needed. Most apple juices/ciders are made from windfalls.

Yup, quite right, but you can also leave out the sugar, and just use some sultanas instead!

Marvellous mixture, and we've frozen loads as well!
