Poached Pike recipe

One medium size pike, say 8lb in weight, 3.5kgs
Herbs, Parsley, thyme, good bunch of each
Onion, carrot, celery, diced bay leaf
Knob of butter
Salt Pepper
Green salad
String
Fish kettle
piece of wood, same length as the pike

Gut and scale the pike
Leave the head on if you like

Melt the butter
Sweat the trinity of veg with the bay leaf until soft but not brown
Add water to the fish kettle with the herbs
Tie the pike to the piece of wood to keep its shape during cooking
Lower pike into the simmering water and add the seated veg
Simmer gently for 15 mins
Remove pike from the court bouillon
Undo string
Discard the pike
Serve the wood with the green salad
Delicious!
