I just add some celeriac and khol-rabi to basic good old leek and potato soup, lovely. 8)

Roast them in the oven with some olive oil, herbs and seasoning.  Either eat them as they are or put them in a food processor with some stock. reheat with some cream.
Cheese makes everything better.

You can mash celeriac and its adds flavour to ordinary mash too. You can turn any veg into soup. I usually sweat onions add garlic then go on from there. Best spice I think are cumin and coriander. Best leaves basil, mint, rosemary etc. Happy eating.

I make a celeriac soup with the usual garlic, sweated onions, then smoked chopped bacon, cubed celeriac, stock, fresh thyme, few bay leaves, salt & black pepper freshly ground and if you can get hold of some good field mushrooms.  I finish it off with cream at the end to serve and some chopped flat leaf parsley on top

You could use some of the leek instead of the onion
