Hmm was going to dig up all of my winter spuds (emerald vale and vivaldi) today - dug a few up the other week. And also some of my winter carrots/parsnips. And typical, it snows and the ground is freezing so it's a no-go. lol.

Will they keep in the ground ok until the ground softens? I will hopefully get there at the weekend if there is a let-up

 If it stays cold it will be ok. One thing might help if you put some straw or black sheet
 over them .

If the potatoes get frosted they will rot. The deeper ones will probably be OK but any near the surface will get caught.

Carrots are usually OK unless the frost is hard and long lasts several days. Earth drawn up against them is usually sufficient, or some straw or other insulation can be put over them. On heavy soil they are probably best lifted and stored as slugs will eat them.

Parsnips are hardy. The tops will die down so mark the ends of the rows with a stick. Move the stick as you dig so that you know where to look next time you dig.
