I had one many years ago that i used for golden pheasant, good incubators . Fairly simple operation with a water reservoir at the back, egg spacers going from left to right in adjustable slots and a sliding floor operated by a manual rod at the front for egg turning.
I never had to adjust the temperature but i seem to remember a tiny hole with a slotted screw in the heater/thermostat unit in the lid.
Sorry i can not be of more help but it was a loooong time ago. :)

Just curious as to how much water to put in it and when, also due to the way it turns there is a gap and Im worried when the chicks hatch they'll fall down the gap!

I think as long as there is water in the reservoir you will have the same surface area for evaporation so nearly full to nearly empty is ok.
Cannot remember what i did about the gap, perhaps the dividers came out and layed across to fill it just before hatching?
You will still need air flow over the reservoir and be able to fill it when you stop turning the eggs at 18 days.
