garlic - what now?

I've dug up all the garlic that was obviously affected by white rot, and removed all the mouldy bits. It looks ok at the moment but is it ok to eat? I realise it probably won't keep very long but I don't want to just bin it if i don't have to. Are there other ways of preserving it other than the usual way?
It probably wasn't a great idea but I hosed them down to get all the dirt off but will this make them more likely to rot or not?
Meanwhile, should I harvest the rest even though it still looks quite green and  not quite ready or leave it and risk it also succumbing?

I'd keep an eye on the rest, they may not all get it.

Ah thank you - I think I'm going to have a go at roasting the bulbs and freezing the puree  :)

sorry but one more question: I haven't composted the mouldy bits, obvs, but can I compost the stalks and foliage, or is it not advisable?

Only compost it if your compost heap gets hot (hot enough to kill the spores)  otherwise recycle centre. Only reason I know this is I have just read it on Charles Dowding (no-Dig) site the other day.
