Potato Salad query

Does anyone know whether potato salad , made with mayo and red onions, can be frozen? Got a glut of potatoes I want to use before they go soft.

I wouldn't think so, no.

Try with a wee tub if you want to. Defrost and eat after a couple of days.

However, blanched potatoes themselves do freeze well.

mayo doesn't freeze nicely though..... :oops: :roll:

Thanks anyway. That was quick.Will follow advise and freeze them par boiled.

you could do the greek version that uses olive oil and garlic and is served warm.

I have successfully frozen the following.Cooked potato mashed with mayonnaise and diced onion sweated off and patted fairly dry on kitchen roll before being mixed in. Or try chopped spring onion.
Shape into thin flat cakes before freezing to allow the mix to freeze as quickly as possible.
