I was given four cues the other day, and some yougurt to go with what I had already made. We have been having tzatziki every day since, then there was another one yesterday and another three today, and I need help.....what can I do with them rather than waste them, I'm all tzatziki'd out, never mind the salads I am eating every day.

Only just seen this one.  This is a lovely pickle, but it needs to be kept in the fridge and eaten up within 2 weeks.  You shouldn't have a problem with that as it is addictive and can be eaten almost as a side salad with cheese, cold meat and fish, or put in sandwiches:)

Sweet cucumber pickle from the River Cottage Preserves book - makes 2 x 450g jars

1kg very finely sliced cucumber
3 small finely sliced red  or white onions
1 tbsp chopped dill or herb of your choice
250g granulated sugar
1 level tbsp salt
200ml cider vinegar

Mix the veg and herbs.  Mix the salt, sugar and vinegar and pour over the veg.  Leave for at least 3 hours before serving, but overnight is better.  Use a large bowl at this stage as lots of water comes out of the veg.

Jar up or store in lidded plastic food storage boxes.

I made a cucumber relish a few years ago that took loads of them, the recipe must have been from here because i dont remember seeing it in my vast ridiculous library of jam and chutney books that hide under our bed to stop hubby moaning.  :wub:

Thanks all, I made a keeping pickle eventually, using most of my precious soft brown (have only seen white here) and I have to say it was a disaster! Yeuch.  It might improve with time. I have been given three more big ones today by a different neighbour, so might try New Shoot's recipe.

Box it up with the liquid ghost, then fish the veg out as and when you want to eat it  :)

I have had a delivery over the fence. I now have six cucumbers and can't face another mouthful! She is a darling but there are only two of us! However, they were accompanied by the first tomatoes (whoppers) of the year. Now those I can always use.
