Hi, I am in the lucky position of having loads of cucumbers growing in the greenhouse this year and wondered apart from giving them away has anyone got any interesting recipies please.

A friend gave me this recipe as she remembered I had a glut last year and had to bin a load. She says it's brilliant and keeps well.


3lbs cucumber weighed when peeled and cut into 1/4" slice
1lb medium onion sliced ( I slice them down rather than across-- like small orange segments) they keep better this way
2 peppers -green, red or whatever de seeded and sliced
1 and a half ounces salt

Peel cucumber and slice approx 1/4" thick, peel and slice onion, de seed and slice pepper.

Layer veg in a colander sprinkling each layer with salt. Cover and leave 2-3 hours then drain and rinse well and drain well.
Pickle
10 oz brown sugar ( I have used any but the brown colours it )
1 and  a half ounce mustard seed
1 teaspoon celery seed
1 teaspoon turmeric
1/2 teaspoon. Ground mace
1 pint white wine vinegar( I have used malt vinegar many a time)

Put all pickle in a pan and bring to boil, boil together for 2 minutes then ad drained veg, return to boil and then pot.

It is ready as soon as it is cool and absolutely delicious.

I made some pickled cucumbers with a touch of curry quite nice

last year I diced and froze some cucumbers - what I hear you ask  :wacko:

I added them into winter soups to bulk and thicken - worked a treat

Well, with trepidation I made a batch of the pickle recipe given by my friend. I had no mustard seed so used a sachet of pickling spice. I have to admit I thought I had made a mistake leaving the little chillies in as it seemed quite hot. Tried it a few weeks later and I have to report it is yummy with cheese, I am a total convert. And I am not keen on pickles.

Picked four cues today and a neighbour gave us three so it looks as if I need to make some more, OH loves it too. :D

This is delicious hot ;) ;) - and you don't need to add cream ;)
Can't remember if there was cream in the recipe, but it doesn't need it regardless :D

Stir frying them in Chinese stir fries, especially with Duck breasts.  Thinly sliced with spring onions with Chinese duck or chicken pancakes.

Bread and butter pickle is absolute favourite for Mr Bee. I have used lots of different recipes but this one is his favourite. Actually it was very popular at the BBQ a coupe of weeks ago. Luckily Mr Bee is bringing cucumbers home by the carrier bag full.
750g cucumbers
625g onions sliced 5mm
375 red or yellow peppers sliced 5mm
3 tabs sea salt
500ml white wine vinegar
500ml distilled white malt vinegar
500g sugar
2 tsp turmeric
1 tab yellow mustard seeds
2 tsp dill seeds

*Cucumbers in bowl and cover with boiling water. Drain and refresh under cold water.
*Cut into 5mm slices.
*All veg in a bowl mixed with the sea salt and leave over night.

*Next day drain liquid and wash really well to get rid of the salt. Taste and if veg too salty, cover in cold water and leave to stand for 10 mins. Then drain.
*Put all the remaining ingredients into a pan, bring to the boil and boil rapidly for 10 mins.
*Add remaining veg, bring back to the boil, then take off the heat and pot the veg and spiced vinegar into sterilised jars.

This pickle is ready to eat straightaway.

You could find a recipe for melon sorbet and substitute cucumber for the melon and add some mint. Could also do this and make a granita.
Or skin, deseed, sprinkle with some sugar and add to a fruit salad, with some chopped fresh mint.
