dehydrating red onions
« on: July 10, 2012, 21:36 »
Some of my red onions have had thier foliage eaten by slugs so I'm going to slice and dehydrate them. I love them raw with cheese on toast and salads can I eat them like this once they are dried without rehdrating?

Also is garlic better dehydrated sliced or crushed?

Dehydrated onions are a bit crispy but if you like them that way, go for it. Personally, I'd rather rehydrate them a bit.

Garlic will dehydrate better in thin slices that you can later break into pieces or turn into powder. The key is uniformity in thickness for even drying.

Here's a good video on this. She's a well known expert on dehydrating: here.
