Yep they are big courgettes and taste of not a lot IMO. The only recipes I know of are stuffed marrow (cut in half and fill with mince/onion type mixtures and bake) and marrow and ginger jam.
I would much rather grow courgettes...much tastier and they don't ramble all over the place like marrows do :)

In my experience those designated as "marrows" will actually keep longer than over-grown courgettes. I grow the stripey ones and the skin seems a lot tougher than an overgrown courgette, which is maybe why.

Looked for stuffed marrow recipies on Google.

straight answer - yes - you can take early and treat as courgettes. Obviously however those bred as courgettes give a lot of smaller fruit earlier and taste better younger than small marrows whilst those sold as marrows grow bigger fruit and keep far better as DD said.
I have taken small marrows early for frying or in omelettes and have also let courgettes grow bigger for stuffing etc  there is no real difference.
(locally a stuffed marrow is called a poor man's goose which no doubt has an historical source in poorer agricultural communities)
