As I'm the only one in my household who likes rhubarb, I've got to make it myself, so I've got a quick and really easy version:

cut washed rhubarb into 1 in chunks - don't add water as it's wet from washing

sprinkle some sugar on and put in microwave bowl with pierced cling film

5 minutes full power, stir with fork, then 2 more minutes

Remove from microwave, stir in good teaspoon of honey (or sugar), then sprinkle the top with a handful of crunchy nut cornflakes

Perfick!
