Can anyone help with a blackberry jam issue?
« on: October 26, 2008, 21:14 »
Hi guys, I made my first ever jam today and it turned out beautiful.

My problem is I don't really like how seedy the blackberries are and wondered if there is any way to sieve it now that it has set.

I've since read how to use a jelly bag (I know, I should have read up first lol) before adding the sugar, is it too late to salvage mine?
What if the Hokey Cokey IS what its all about...

You could rub it through a sieve and then add a little more water and reboil to sterilize and rebottle. This is called a fruit cheese, it's cloudy but wastes less than jelly. Messy but worth it if you don't like bits :)

Worked a treat thanx pool.

It tastes like 'real jam' according to the family so I had to bake some scones and bread to accompany it  :D

Its all new to me Cawdor but from what I can gather its a crafty device in which you strain your cooked fruit through overnight prior to adding sugar.  I believe muslin does the same job.

Here is what I found on google...

could you use a sieve to do the same job as bramble/raspberry seeds are quite large?

Apparently its better to allow the fruit to strain and not to force it through a sieve, i'm not sure why though, i'll need to do some more research.

If you want a clear finished product you strain it through a jelly bag if it doesn't matter if it's cloudy you rub it through a sieve. Jelly bags waste more of the fruit and require patience so guess what I use?

Ahh that makes sense.

I'm guessing you don't mind what it looks like either pool, so long as it tastes great.
