How long do you think this will keep for?

After managing to give myself food poisoning on a couple of occasions, I'm always a bit tentative about making sauces and keeping them in the fridge.

However I have discovered an amazing Thai style peanut sauce which you can make in 5 minutes - but it makes rather a lot for one person.

I make it with real peanut butter though (rather than PB2)

Thing is, it is so nice it is something I would make to jar up and give it to friends as a gift - and I wouldn't want to poison them!

Nothing is cooked in it. 

So far I've managed to keep a jar for about a week in the fridge (as that is as long as it lasts before I eat it all!)

The other thing I though I could try was to vacuum seal the jars - do you think this would work?

I would just freeze any sauces , i do the satay sauce and freeze in managable ammounts , just needs working abit when you defrost it needs heating throuh , also did a devine chinese plum sauce which made loads so just froze the same managable ammounts .
