Damson 'jam' oops
« on: October 23, 2010, 10:46 »
I have overboiled the damson jam this year.  Probably being too diligent about removing the stones while it was boiling.
It is so firm I can barely get it out of the jars! What can I do with it?
Please be kind ;)
If you can't be an excellent example be a terrible warning...

I've never had any but how about damson tarts?  As the jam is thick it should cook really nicely and not boil over the sides of your pastry.  I don't know how they would taste. :(

What about an apple cumble with some of your jam under the crumble bit?  I don't know what the consistency would be like but it's better than not using it. ???

Just done a search - this site should give you some ideas - 'pulling candy' looks like fun:

thank you all - I diluted some and 'melted it down' this morning and whisked it into Greek yoghurt for a delicious breakfast. Crumble this evening!

If it's really firm you could chop it into cubes and roll it in  icing sugar?
