Christmas plum pudding
« on: November 23, 2010, 17:09 »
I have a couple of bags of plums in my freezer and I am looking for recipes for alternative Christmas plum puddings which contain actual plums! Most of them don't, and now i realise it's just an old fashioned name for Christmas pudding. does anybody have a recipe that  is Christmassy, spicy, and does actually include fresh/frozen  plums? The only ones I have been able to  find are American ones. anybody know what the  metric (or imperial) equivalent of a cup is?Or if you could poiint me in the direction of a good website...

I always thought that the plums in plum pudding were prunes, dried plums :)

you could make an autumn pudding (like summer pudding but with plums, blackberries and apples),  :)

Staffies are softer than you think.

Thanks for  these suggestions. The conversion information will be very useful. I have done a bit more searching and found a recipe for plum gingerbread pudding:

Ingredients
1 1/2 lb plums, stoned and cut in half
6oz caster/superfine sugar
2oz butter
1 tablespoon black treacle
1 tablespoon golden syrup
6 tablespoons milk
1 egg
4oz plain/all purpose flour
2 tablespoon granulated sugar
1 teaspoon mixed spice
1 teaspoon ground ginger
1/2 teaspoon baking powder

Method
- Mix the plums with the caster sugar and put into a buttered ovenproof dish.
- Put the butter and both syrups into a saucepan and melt over a low heat.
- Add the milk and beaten egg and leave to cool.
- Put the flour, granulated sugar, spices and baking powder.
- Add the cooled syrup and milk mixture and blend well together.
- Spoon evenly over the plums.
- Bake at 160 degrees C. for about 1 hour and 15 minutes.
