Chinese Marmalade made from Plums

Trying to think of new ideas of how to use plums, so just made this from an old preserving book I have, smells just like Christmas pudding:

1kg of plums, zest and juice of an orange and lemon cooked till soft then sieved (tedious), add 1kg of demerara, 1kg chopped raisins, simmer for 30 minutes, add 75g chopped stem ginger, boil for 5 minutes, cool for a little bit then add a tablespoon (or 2) of brandy.

No idea what it will be like on toast though!

Not sure where the name of chinese marmalade comes from, but that sounds gorgeous!

MMMMM I can smell that already  :D

'Chinese' probably refers to it not being proper marmalade but something unusual .... fro the old days when all 'good' stuff came from China  :lol: :lol:
