To fridge or not to fridge...

To fridge or not to fridge...

Now that one of my hens has started laying (another egg today..hooray!!)
and the others will hopefully follow soon.
Is it best to put the eggs in the fridge or just keep them on the side in the kitchen?

I keep mine at room temp but if your room is too warm I suppose that could be a problem. Maybe the answer is to use them quickly :lol:  :lol: Not a problem when you just get a few but when they all lay at once I end up freezing some for later.

We always keep ours in a cool spot away from heat and sun, my mother used to keep 200+ chickens and she all ways did the same.

I have been asked lots of times why they put egg holders in fridges then? I have never been able to answer that question  :?

Hi Ygerna, you separate the yolks from the whites first.  The whites can be frozen on their own.  The yolks go all rubbery if you don't freeze them with either a little salt or sugar sprinkled on and beaten in.  I freeze a number of yolks together like this.

I understand that you can beat a whole egg lightly and freeze that without salt or sugar, but I have never tried it.

Hi, definitely keep them at room temperature if you can.  Stick the egg trays from your fridge in a cupboard.

I freeze eggs by whisking 2 eggs together and pour into thoroughly cleaned yoghurt pots. When frozen seal into bags or airtight boxes. When you defrost them they look totally grim but make excellent cakes or scrambled eggs and Quiche and bread and butter pudding etc. I don't add and sugar or salt and have kept them for 6 months with no probs.
