I don't think it's possible.  Flapjacks are just oats stuck together with sugar and fat.  Leave the fat out and you'll have sweet crumbly oats.

my aunty used to make a crunchie type of thing with meled marshmallows little butter and rice crispies , i think marshmallows are low in fat so if you use oats instead of the chrispies it may well work , they were mot crunchi but chewy in texture and you dont need to cook them just let them cool.

Low fat flapjacks?  I think that's an oxymoron!  Just eat half as many.  No help at all am I?

Now that's a challenge! Have you considered the addition of PVA to keep it all together ;)

OK Looks like I am going to have to resort to some good old Structural adhesive it keeps F1 cars together so I reckon a few oats won't be a problem for it

What would happen if you mixed oats into boiling jelly?  As it cooled, it ought to set the mix up nicely.  Anyone have a few sacrificial apples to experiment with?

Thanks for all the replies Guys and Gals

I came up with this recipe and its not that bad
(I mean lets be honest any low fat flapjack isn't really a flapjack at all)

300g Apple sauce
120g Dried Apricots
120g Raisins
50g Demerara Sugar
120g Mixed Seeds
75g Rolled Oats
75g Self Raising Flour
50g Desicated Coconut
2 Eggs

Very nice and should come in handy for my walking..
