Weekend recipe - Chorizo stew.....

Use cooking Chorizo, not the Tapas kind :tongue2:
Brindisa sell brilliant ones, nearly as good as the ones Bodger made - they did look brilliant :lol:

Serves 2.

1 Chorizo, chopped into rough bite sized pieces
1 onion
bay leaf
Dry or medium sherry, 2 generous glasses :D
Waxy potatoes, Charlotte type, cut into bite sizex pieces
Olive oil
Parsley to garnish
Salt & Pepper
Hot water

Drink one of the glasses of Sherry, refill glass if neccessary, usually is, I find.

Take a small casserole dish that can go on the hob and that has a lid

Chop & fry onion until golden
Add bay leaf
Add chorizo
Fry until slightly brown
Add second glass of sherry, or is that the third?
Let it all sizzle for a minute
Add pots
Add hot water, untill all ingredients are just covered.
Put lid on and put on oven for 40 mins
Holds the heat like mad so let stand with lid ajar for 10 mins
Enjoy with bread & salad
And more sherry

Yes. Must try this at the weekend. I like gutsy food rather than stuff that's been ponced about with.

Sort of thing Nigel does.
Growing salad leaves isn't rocket science.

It was lovely. Going to tweak the recipe a bit next time. Cut down on the potatoes and add some butter beans.

I used to take my son skateboarding to Ladbroke Grove, and near the Portobello Road Tesco is a great Spanish delicatessen. They had some fantastic ingredients like dried beans and chorizo, which I never got round to incorporating in a recipe. Now you've done this for me!

It's full of wonderful gutsy mediterranean recipes, many derived from their East End lottie, now sadly bulldozed to make way for the Olympic park.
