Cauli's turning turning purple

Cauli's turning turning purple

Help!!  My first ever successful year at growing cauliflower.  Two rows of beatiful white heads(' serac 'and 'all year round' ) Planted too many of course but others are reaping the benefit.  Now I've noticed the curds are developing a purple tinge.  Are they still safe to eat? and what causes this?  Bit of an anti climax to my first ever success with cauli's.  Anyone any suggestions?

As far as I know they're safe to eat.  To keep them white, gather up the leaves over the curds and secure with a rubber band or bit of twine.
