BIG beetroot.

Good morning everyone,

I have a few large beetroot in the garden, do they get 'woody' with age?

I grow Boltardy to a large size and they still roast/slow cook well. They obviously take longer to cook but I think this isn't just due to size but age too.

I pulled all my beetroot and some were much bigger than the others.  I boiled the larger ones for longer but I don't feel any difference between them once they were sliced.  I guess if you leave them in the ground for ages once the growing has slowed / stopped, then they might go woody.

I think it depends on the variety to be honest.  I have grown Dobbie's Purple to an enormous size and it isn't woody at all, but othet types seem not to last so well.

we grew 2 varieties this season and to be honest both turned out much the same some large some medium some small the varieties we grew where Crimson King and Bona both have good flavour we pulled all the beet and put most of it in the freezer to eat at a later date
