soft set jam

Hi - can anybody tell me how to get a set with strawberry jam? Mine has either a soft set, more like a sauce, or I over boil it and it becomes caramellised - it also catches on the bottom of the pan during rapid boil!!

IMO you really need to use some pectin, either sachets or liquid,(or use the jam sugar with pectin in) in order to get a set with strawberry jam

The coop sells little sachets of pectin at the sugar section - most other supermarkets don't seem to.

yep, strawberries are low in pectin so you need to add some.  Keep the hob temp down just a touch to prevent burning.  I did the same thing with my 1st batch of plum jam but the next lot I turned the heat down a bit, it took a little longer but did set.

I think "we" use jam-making sugar that probably comes with pectin in it... seem to recall a squirt of lemon juice going in too for strawberries...

If you cannot get pectin the juice of a lemon will do the trick. Catherine
